To ensure correct portion control and ensure that the corret amount of “mise en place” are prepared and set up for service in the kitchen, including items for Indigo kitchen, Staff Brasserie, and our Afternoon Tea Restaurant All purchased and prepared foods are labelled, dated and food stocks rotated, kept in legal, hygienic conditions To ensure service of menu items from the kitchen to waiting staff are carried out in an efficient and courteous manner Ensure that both food preparation and preparation areas and equipment conform to the 1990 and 1995 government legislation on Health & Food Safety, Act and HACCP Guidelines To be conversant and work within One Aldwych Health & Food Safety Policies and One Aldwych Food Safety Hazard Analysis and Critical Control Points ( HACCP) To cover/ run the Room Service and Lobby Bar section, predominantly when the late kitchen brigade left and as and when required.
